The soaked paddy is then drained and steamed until the grain achieves full gelatinisation, giving it a translucent look with no opaque core. It is then dried to the required moisture level and stored. This rice remains firm even after cooling and has minimal breakage in milling, making it economical for buyers and millers alike.
